Chicken Parmigiana Recipe~ Paired With A Wonderful Red Wine

I was inspired by the wine because I had tasted it and said to myself that this will be an amazing pairing with cheddar cheese or with a Red Sauce based dish!!! Start With One Large Half Of Chicken Breast!

I started with one large half of a chicken breast.When slicing it slice across the breast at an angle. One large Half chicken breast as you can see creates a large plate of food!!! So I planned on making 2 servings it was even enough for 4 when I got done!!! So depending on how large you want the servings you can really break up smaller in a pinch!!!

The Wet Wash And Dry Batter

Then I mix one egg and a cup of milk for a wet wash to make the flower stick!! The egg fluffs up the fried batter but not too much!! That is why I like a dry batter for this recipe!!! Makes a great breading to work with the Sauce and spaghetti!!!

Then I mix 1 cup of Flour, 1 tablespoon salt, 1 tablespoon Granulated Garlic, 1 teaspoon each baking powder and, corn starch. Then add 1 teaspoon of black pepper!!! Mix well to combine all the ingredients together!! This will be the dry batter when you deep fry your chicken!!!

Always Use Caution When Frying On The Stove!!!

Now that you have all the ingredients set up you want to start your grease heating!!! I have always fried food on the stove but you need to be cautious of the flame or heat when dealing with deep frying!!! So if you have a Fry Daddy or other type of home fryer is the safest route to take when deep frying food!!!

I fry in Crisco Vegetable Oil . So I take and wet the chicken in the milk and egg then then dip into the flower. Then I Repeat the process one more time!! So re-dip the Chicken then put into the flower again!!! Then carefully lay the chicken strips in the Oil and fry till golden brown!!! Slice them about1/2 inch slices so that they fry evenly when cooking!!! Do not over cook here because you will be adding them to the broiler for a few minutes as well!!!

Deep Fry Chicken In Vegetable Oil

After you have the chicken breast strips fried lay them in desired proportion for each plate!!! Then cover in sauce and I place in the broiler with out the cheese to allow the sauce to flavor the chicken a few minutes before you cover in cheese and allow to melt into the mix. Let the cheese melt and just start to tan the top!!!

Cook Pasta And Spaghetti Sauce

Now while you are allowing the chicken to cook and getting the sauce ready you also need to cook the pasta!!! That needs to be done at the same time as everything else so you are serving hot pasta right out of the pan!!! That is the best way!!! Do not rinse the pasta starch that causes it to stick together will help the sauce stick to the pasta allowing the flavor to cling to the pasta better!!! So try to cook the pasta so you can drain and serve!!!

The sauce you can make from scratch if you have your own recipe!! I choose to use what ever there is for sauce out there that I enjoy!!! There are a lot of great spaghetti Sauces on the shelf that have great flavor!!! I did add ground beef to the sauce for some extra stock to the sauce but you can have just the sauce if you desire!!! Its all to your personal preference!!! That is the great thing about cooking you can build and create in ways that you like best and still get a wonderful meal taylored for you!!!
