Honey Mushrooms & Blade Steak

Wild honey mushrooms are absolutely amazing!!! With this recipe they are ingredients in both to the roasted vegetables and the mushroom sauce. This was a recipe that was inspired when a friend stopped by with a bag full of wild Honey Mushrooms!!!

We do what we call a Wine & Dine Show on zoom every week. This is where we get together and enjoy fine wines from our Wine Of The Month Club and the people cook recipes live on zoom!!! It is a great event each week, especially in these times of seclusion!!!

We have a great time just like the video below!!! That is a recording of the Wine & Dine Show showing the recipe with these wild honey mushrooms!!! I had way too many to cook at one time so I processed some and froze them.

Wild Honey Mushrooms &
Blade Steak With Mushroom Sauce

Paired With Antoniou 2017 Cabernet Savion

Roasted Vegetable Mix:

I started with Red Bliss Potatoes washed and cut up into about 1 inch cubes. Then I used fresh carrots cut up about the same size. Leave the skins on the carrots, it gives more of an earthy flavor. Add some celery and onion all about the same size basically bite size vegie chunks!!! Then the wild goodness. The honey mushrooms I added whole.

Take all those vegetables and mix them up in a big mixing bowl. Then take olive oil about 1/2 a cup, and heat it up. Next you want to add 3 to 5 cloves of garlic minced. Add some rosemary, salt, pepper and paprika. Let the oil get warm enough to draw the flavors out of the spice and into the oil. Now pour the flavors and oil over the vegetable mix and add to a pan you can roast them in the oven.

Before you put it in the oven you want to add some liquid to the bottom of the pan. This is where I use the Angry Orchard hard cider. Then cover with tin foil and bake on 350 for about an hour and a half or until the vegies are soft.

The Steak:

This steak is very basic. I do not use much spice when cooking a good steak that already has great flavor. I just sprinkle salt, pepper and granulated garlic on the steak. Then I heat a cast iron pan and add a little olive oil just to coat the pan. Now in the hot pan you lay the steaks and let them sear that is going to seal the juice inside the steak!! Cook to desired temperature. After the steak is seared on both sides turn the heat down to medium and finish cooking.

Now Honey Mushrooms Sauce

Start by chopping up the mushrooms and adding them to the pan you cooked the steak in. Give them a minute or two to fry in the pan!!! Next you want to deglaze the pan with the angry orchard hard cider then add beef stock. now simmer and add some Corn Starch and Water. This will thicken the sauce and make a great sauce for your vegies and steak!!!

What an amazing wine to pair with any steak or red meat dish!!! Then paired with the flavors of the Rosemary in the vegetables and the sweetness of the mushrooms it was exquisite!!!
