Broiled Atlantic Salmon

Broiled Atlantic Salmon and Freedom Chardonnay , Wow what a great food and wine pairing!!! We just had that this evening and I sat right down and decided I wanted to share this with the world!!! See I love broiled Atlantic Salmon anyway and if you have seen a few of my Recipes you will find I like broiled fish!!! But Broiled Atlantic Salmon is my absolute favorite!!! Its great in the winter for it has a buttery fatty content. While its awesome in the summer with a light salad and fruity Dressing and of course any of our white wines!!!

Broiled Salmon

I make my broiled Salmon truly simple!!! Salmon does not take a ton of season or added flavor!!! I usually will just add a touch of lemon juice some white wine and a pat of butter spread across the salmon!!! That is just enough Moisture to keep it from drying out and adds a nice flavor that goes with fish very well!!!

So you take a fillet of salmon and lay it skin side down on a baking sheet!!! Then you take a lemon wedge and just sprinkle it lite across the fillet. Next you take a soft butter pat and just spread it so that as it melts it will run down across the fillet. This will pull the flavor of the lemon and wine into the fish fillet!!! Then its put it in the broiler on high!!! Now you have to watch it close because every oven is different but you want to cook hot and fast and want the inside still just a little darker orange when it flakes apart!! this is almost medium rare!!!

I served it with baked potato and corn for this diner but us also great with a salad or even a cold salad like potato salad in the summer!!! Really salmon goes great in so many ways and I absolutely love every way I have tried it!! From Blackened in a hot pan with Blackening season to Smoked served with cream cheese and capers!!! So salmon is one of my favorite fish to cook with!!!

I found this to be an amazing pairing!!! The loud fruity almost citrus flavors accent the flavor of the Alaskan Salmon!!! I love this easy recipe that truly has some amazing flavors!!! You can add a cracker crumb topping if you desire to have a crisp to the top!!! With this light fruity wine you will love the wonderful pairing you try!!!
