Strawberry Walnut Stuffed Chicken Breast
Ingredients:
Ingredients, First you want to start out with some nice chicken breast!!! Its important to find young tender chicken and not a huge package of large chicken breast!!! Be selective in your choice of ingredients when putting together a good meal!!! The flavor can be amazing but if the chicken breast is old and tough it will ruin the whole meal!!
Strawberries, Fresh strawberries is the only way to go!!! You need them to keep shape, not be full of moisture and water!!! So you want them fresh!!! Also find a quality walnuts to use!!! You do not want dollar store walnuts in a great recipe!!! Remember the quality of the ingredient effects the quality of the finished product!!! Also you will need to find some apricot brandy!! This is how you will finish your sauce!!! The apricot brandy give the sweet sting that mixes with the strawberries!!! You will also need chicken stuffing mix or make your own stuffing!!! I suggest making your own stuffing!!!
Home Made Stuffing or Box?
Decide what you are doing for stuffing Just follow your basic poultry stuffing recipe or use a stuffing mix but you want to start with a quality stuffing!!! Then you want to dice up about 1 large or 2 smaller strawberries per stuffing breast!!! And enough stuffing to have about 3/4 of a cup per chicken breast!! Mix the strawberries and stuffing together so that it is well mixed!!! Then put the stuffing in piles about 3/4 of a cup each!!!
I usually start by butterfly the chicken breast so that it is almost the same thickness all the way through!!! This will help it cook better the whole way through!!! Add strawberries on the bottom. A layer of Stuffing Then Strawberries Before you close the breast around the stuffing!!! Amazing!!!
Pre heat your oven to about 350 degrees!!! Place your chicken breast in the pan with the pinned side down. Then you want to cover the baking dish and place in the oven. I also put about 1/4 cup of chicken stock in the pan, just enough to keep the chicken moist!! Cover with tinfoil till almost cooked them open it up!!! Cook for about 45 minutes and check!!! If they are almost complete then you want to take some finely chopped walnuts and sprinkle them on the top to brown while the chicken finishes cooking!!! Again Optional!!!
Strawberry Apricot Sauce
Start with just a warm pan and take some chopped walnuts!!! (Walnuts are optional) Allow the pan to draw the oil and flavors out of the walnuts!!! Then you want to add the apricot brandy and strawberries to the pan and allow it all to simmer and reduce!!! Then you want to add heavy cream and allow that to reduce!!! You can add a dollop of sour cream to finish as well!!! This will give your sauce just a little more of a bite!! let simmer and reduce or thicken!!! I finish with 2 teaspoons of sugar!!!
Add some fresh sliced strawberries just before serving for garnish and flavor!!! Place the chicken breast on a place and drizzle the sauce over the top!!! Great holiday meal or an evening with friends!!! Goes well with a light salad, and a smooth White Wine!!!
