Broiled Haddock- Lite Flaky Fish
Broiled haddock is a very simple recipe that goes well in the summer with a salad of citrus and baby greens mix!!! Baby spinach is great for a leaf for a salad as well!!! Sticking to a olive oil and a splash of lemon juice goes well on the salad as well!!! Add cuties orange wedges or mandarin oranges, melons make a great base to a salad as well!!!
The broiled haddock recipe you see here can also be used with tilapia which is another great fish that can be a little lower in price but still make a great diner!!! So take your fish and look at it really well clean it and wash any fish smell from it!!! When you select your place to purchase fish you want that place to not smell of fish!!! Truly when you smell the strong aroma of fish that is not just because it is fish. You really want the fish to have a clean smell and not strong fish.
Ingredients
*12 oz fillet fish per serving (Tail Section)
*Lemon and white wine for moisture and flavor
*1 Pat of Butter
*Cracker Crumbs (Ritz Go Great With Seafood)
*Salt, White Pepper, Granulated Garlic
*One Bottle Of Parables In White

So you want to lay the Fish fillet Skin side down!!! This is really going to help when you go to remove the fillet from the pan!! It is smooth and holds together well when you take it off the pan!!! So when you lay it flat on a sheet pan you take the wine and drizzle over each fillet!!!
Next you take a pat of butter and cut into pieces and lay across the fillet!!! You want real butter for this as it makes all the difference in the food and the flavor of the food and the wine pairing!!!
Under The Broiler
Now you place the pan in the oven under the broiler!!! The broiler is best used in this case and you want to judge between low and high or you may have to start on high and drop to low but its a quick process!! My oven I put it on low and then when I top with the crumbs at the end I turn it up to brown the topping!!! You want to fish to cook, but not over cook or dry it out!!! You want to fish to flake apart and be a solid white in the middle
Cracker Crumb Topping
Not the bread crumbs have always been part of the secret!!! I use Ritz cracker crumbs that are crushed up to a crumb!!! Now you want to add some parsley, seafood seasoning, granulated garlic, and a little white pepper!!! Pepper does have a different flavor with the different colors!!!
Next you want to add Parmesan cheese in the mix. Take a lemon and squeeze a wedge around over the crumbs. Also take some olive oil and add to the mix and moisten the crumbs with the olive oil. This will help the crumbs not burn but be a nice brown
These Crumbs work great for many seafood baked dishes or crumbs on the top of Mac and cheese!!! Great topping to just have around!!! So when you make it you can make extras and save them!!! Just keep them in a dry storage and do not add the lemon juice just the oil and seasoning

You will want some baby greens, These are lite and tender and go really well with this perfect healthy pairing!!! baby spinach and leaf lettuces, Add some melons, Mandarin oranges, just what ever lite citrus or juicy fruits to add to the salad making a a great mix of summer flavors!!! Use a raspberry vinaigrette To accent the flavor as well!!!
